Raised in Omaha, Nebraska, David Utterback, a self-taught sushi chef who has been holding down his station from dishwasher to line cook to restauranteur for the past 19 years. In 2023 David proudly represented Nebraska as its first finalist for Best Chef, Midwest at the prestigious James Beard Awards as well as a previous three time semi-finalist. His Namesake restaurant Yoshitomo was also a semifinalist for the national category of Outstanding Restaurant in 2024.

When not running operations at his restaurants Yoshitomo and Koji, you can find David behind the board of his private omakase counter Ota, popping up in various national media and extensively traveling Japan and the United States learning, working and collaborating with other chefs and shokunin.
